Roasted Mushrooms with Spicy Thai Dressing

Ingredients
Spicy Thai Dressing

cup
lime juice

tsp
Sriracha
½-3/4
tsp
crushed red pepper flakes

tbsp
dark soy sauce
2
tsp
honey
1
tsp
fish sauce
salt (if needed)
Mushrooms
12
oz
cremini mushrooms, halved
2
tbsp
unsalted butter
1
tbsp
olive oil
Instructions
Spicy Thai Dressing
Squeeze the lime juice into a measuring cup, add remaining dressing ingredients, whisk briskly and adjust seasoning
For the Mushrooms
Melt the butter over medium heat
Add the olive oil and mushrooms
Season with a pinch of salt and cook until the mushrooms release their rich liquid and cook till it evaporates, 10-12 minutes
Switch the stove off and add the dressing
Let the mushrooms sit for a few minutes before serving
